Rainbow Chia Pudding

This smoothie bowl is actually made from chia. It is delicious, nutritious and filling! It takes a little preparation though because you need to let the chia puddings set.

Rainbow Chia Pudding

 

Blue Pudding
3 tbsp chia seeds
1 tbsp coconut yoghurt
½ cup of water or nut milk
¼ tsp butterfly pea powder
 
Pink Pudding
3 tbsp chia seeds
1 tbsp coconut yoghurt
½ cup of water or nut milk
¼ teaspoon dragon fruit powder
Mix both pudding mixtures separately and let them set for 20mins or longer in the fridge. Once set, serve in your coconut bowl and add your toppings.

Pomegranate
Buckinis
Coconut shreds
Blackberries
Pitaya (dragon fruit) powder sprinkled on top
Passionfruit
Cacao Nibs
